Spicy Sausage Pasta and Melt In Your Mouth Chicken

This weekend I tried a couple new recipes that I wanted to share. The first one is Spicy Sausage Pasta that I pinned from Kevin and Amanda's Blog awhile back because it looked delicious and I knew Greg would like it. I finally got around to trying it last night and it was delicious!! It calls for 8oz of penne pasta, but there was so much extra liquid, that next time I'll use a whole box of pasta. We just used a slotted spoon to serve it up and it was so delicous. I also used "hot" rotel tomatoes instead of mild--we like it spicy. ;)

Spicy Sausage Pasta

1 tbsp olive oil
1 lb smoked sausage
1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions
1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

The second recipe was one of my favorite recipes of all time, Melt In Your Mouth Chicken. I loved this recipe so much! It was so good. It's made with mayonaise, so it's not the healthiest, but I saw another version that uses Greek yogurt instead, so I'm going to try that and see if it's any good. I'm also going to try it with reduced fat mayo also and see how that works. This was such an easy recipe, I see us having this a lot!

Melt In Your Mouth Chicken
1/2 cup parmesan cheese
1 cup mayo
1 tsp garlic powder
1 1/2 tsp seasoning salt
1/2 tsp pepper

spread mix over chicken breasts
bake at 375 45 mins

Can you believe it's that easy?!
